Ingredients needed to make vegan waffles.

All-Purpose Flour. If you're gluten-free, you can use a gluten-free flour blend as a substitute.

Granulated Sugar. While I used granulated sugar in this recipe, you can use brown, coconut, or cane sugar instead for a different flavor.

Unsweetened non-dairy Milk. Any type of non-dairy milk works in this recipe like Almond Milk or Oat Milk, but I prefer unsweetened Soy Milk for its neutral flavor and high protein content.

Canola Oil. Using oil instead of vegan butter is key to achieving a crispy and golden texture. Canola oil is my favorite but melted vegan butter, coconut oil, or any neutral-flavored oil will work.

📋 Variations

Take your vegan waffles to the next level with these delicious variations:

  • Blueberry Waffles: Fold 1 cup of fresh blueberries (150 grams) into the waffle mixture before cooking.
  • Chocolate Chip Waffles: Stir 1 cup of vegan chocolate chips (180 grams) into the waffle batter before cooking.
  • Cinnamon Apple Waffles: Mix 1 tablespoon of ground cinnamon into the waffle mixture, and add 1 cup of chopped apples (125 grams) before cooking.
  • Banana Nut Waffles: Add 1 mashed ripe banana and ½ cup of chopped nuts (about 60 grams), such as pecans or walnuts, to the waffle mixture before cooking.
  • Lemon Poppy Seed Waffles: Add 1 tablespoon of poppy seeds and the zest of 1 lemon to the waffle mixture. Serve with lemon juice and powdered sugar on top.

Step 1: Preheat your waffle iron according to the manufacturer's instructions, or to 400°F (200ºC) if your waffle maker has a temperature gauge.

Step 2: Mix 2 tablespoons of ground flaxseed with 6 tablespoons of water to make the flax eggs. Let the mixture rest at room temperature for at least 5 minutes.

Step 3: In a large bowl, whisk together the all-purpose flour, sugar, baking powder, and salt.

Step 4: Add the flax eggs, non-dairy milk, oil, and vanilla extract to the dry ingredients, and stir with a wooden spoon until JUST combined. Don't over-mix, a few lumps are okay.

Step 6: Close the lid and avoid opening the waffle maker before the steam has COMPLETELY stopped to ensure evenly cooked waffles.

Why do my vegan waffles split in half when opening the waffle maker?

Waffles may split in half when opening the waffle maker if binding agents (e.g., flax eggs) are insufficient, or if opened too early before the waffles are set.

To prevent splitting, ensure your recipe includes adequate binding agents, and be patient and wait for the waffles to fully cook before opening the waffle maker.

What's the difference between Belgian waffles and regular waffles?
