I usually have a smoothie for breakfast, I love them, they are satisfying, healthy, low in calories and there are so many combinations that it's impossible to get bored. This creamy carrot smoothie is so good for your skin and to treat constipation.

To make this creamy and delectable smoothie you need: carrots, prunes, walnuts, cinnamon, nutmeg, vanilla, one banana  and water or almond milk. It tastes like a carrot cake, especially if you use milk instead of water.

You can add or remove any ingredient and your smoothie will be so delicious. You can use dates or dried fruits instead of prunes, other nuts or seeds instead of walnuts, other spices or even you can use other plant milk, instead of almond milk.

Carrots are a good source of Beta-carotene, which is a powerful antioxidant that can help you to prevent cancer. They also help you to improve your circulation and prevent premature aging effects caused by free radicals. In addition, carrots are good for your intestinal health, they are so useful to lower your cholesterol, to prevent arteriosclerosis and to have a beautiful and healthy skin.  Carrots have a low glycemic index, so they are an ideal food for diabetics.

Prunes are one of the most powerful antioxidant fruits, they have anti-cancer properties and they are a healthy way to treat constipation, in addition, they have 5 times more fiber than regular plums. You can soak prunes in water overnight, and eat 2-4 in the morning with soaking liquid, but you don't need to soak them if you don't want to. Anyway, if you want to solve constipation, the best thing you can do is to live a healthy lifestyle with healthy foods and regular exercise.

If you're on a diet or you want to eat low in fat or calories, you can use water instead of the almond milk, or you can also use other plant milk such as oat milk (you can find the recipe in our free eCookbook). You can add more water or milk if you want a less thick and creamy smoothie, it's totally up to you.

This carrot smoothie is so tasty, creamy, healthy, silky, sweet and low in fat and calories. You should eat fruit and green smoothies, they are so good for your health, you only need 5 minutes to prepare them and they taste amazing!

Ingredients

  • 1 cup carrots
  • 1 banana
  • ⅓ cup prunes
  • ¼ cup walnuts
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 teaspoon vanilla extract , or one 2-inch piece vanilla bean
  • 2 cups water or almond milk

  • Blend all the ingredients in a blender until smooth.

    soooooooo good!!!
    tastes just like carrot cake 😀
    even my 18 month old sucked this right down (and he is usu. not a fan of carrots)!
    the only change i made was i used dates instead of prunes, b/c i didn't have any.
