Do you know how I absolutely love no-cook recipes? And when they're extremely easy yet flavorful, healthy, and nutritious, I ADORE them even more. Full of creaminess and low-carb, I just can't get over these stuffed avocados. They taste so good!
They're a great and simple way of incorporating more greens into your diet and you can actually make them in just 10 minutes. Besides, it is a wonderful gluten-free appetizer to bring to any social gathering that you might be attending. Truly something else!
How to make stuffed avocados
- To make the filling, add all the ingredients to a mixing bowl (except the avocados) and stir until well combined.
- Slice the avocados in half and remove the seeds.
- Top the avocados with the filling.
- Serve your stuffed avocados immediately.
Stuffed avocados ingredients and tips
- Black beans: feel free to use canned black beans or cook them from scratch. To make this stuffed avocados recipe, you can use any type of beans, though.
- Corn kernels.
- Red onion: use what you have on hand.
- Fresh parsley: you can also incorporate other types of fresh herbs, like fresh cilantro or basil.
- Salsa: store-bought salsa is okay, but try to make our super simple salsa recipe!
- Cherry tomatoes: use your favorite kind of tomatoes.This recipe will be delicious in any way!
- Avocados.
- Feel free to customize this stuffed avocados recipe with chopped tempeh bacon, vegan sour cream, or some vegan mayonnaise. Go ahead and incorporate your favorite toppings!

Stuffed Avocados
Ingredients
- ½ cup canned or cooked black beans, any other beans will do
- 2 tablespoon canned or cooked from frozen corn kernels
- 2 tablespoon red onion, finely chopped
- 2 tablespoon fresh parsley, finely chopped
- 2 tablespoon salsa
- 4 cherry tomatoes, finely chopped
- 2 medium ripe avocados
Instructions
- To make the filling, add all the ingredients to a mixing bowl (except the avocados) and stir until well combined. Feel free to sautée the black beans in a skillet with some olive oil if you prefer them hot, but that is not necessary.
- Slice the avocados in half and remove the seeds.
- Top the avocados with the filling.
- Serve your stuffed avocados immediately.
- Best when fresh, you can squeeze some lemon juice on top to prevent oxidation if you’re not going to eat them right away.
Notes
- Feel free to customize your stuffed avocados recipe with any type of beans, onion, fresh herb, sauce, or veggies you have on hand.
- Add or omit any ingredients you want, such as bell pepper. This recipe will always be delicious!
- Although I didn't use any, feel free to incorporate some sea salt to enhance all the flavors.
- You could also incorporate other ingredients like chopped tempeh bacon, vegan sour cream, or some vegan mayonnaise. Go ahead and incorporate your favorite toppings!
