15 Minute Cannellini Bean Stew

I shared a picture of this tasty 15-minute cannellini bean stew on Instagram a few weeks ago and as I promised, here is the recipe!

It's a super healthy, nutritious, quick and easy meal which is ready in less than 15 minutes. You can use canned cannellini beans (try to avoid nasty ingredients like preservatives or additives), although I prefer to cook big batches of brown rice and raw legumes every week to make my meals in a hurry. This is great if you are really busy and want to eat healthy. It's the best thing you can do to avoid processed and junk food.

The stew will be also delicious if you use any other legume. You can also add some cooked brown rice or quinoa (I love it, but I don't eat it very often because is really expensive here in Spain).

Alberto usually eats this stew with some salad, but I prefer to place a lot of leafy greens on the bottom of my plate and add the stew on the top. It's really important to eat leafy greens every single day, they're one of the most nutritious foods in the world.

I love low fat recipes, they're really healthy and I always try to eat healthy fats like avocados, nuts, seeds (I adore tahini!), coconut or non refined oils. I used oil-free tomato sauce to make this recipe, but chopped tomatoes or tomato paste also work.

Sun dried tomatoes are so tasty! I buy them dried and I usually rehydrate them in a bowl with warm or hot water for at least 20 minutes or until they're soft. I keep them in an airtight container for a few days. If you're really busy, use store bought sun dried tomatoes in olive oil and drain the oil to make this recipe. Ingredients

  • 14 oz canned or cooked cannellini beans
  • 2 cups tomato sauce, chopped tomatoes and tomato paste also work
  • 1 and ½ cups dried tomatoes rehydrate with water or oil, chopped
  • 1 cup corn kernels
  • 2 tablespoon tahini
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 tablespoon sweet paprika
  • Black pepper to taste
Prevent your screen from going dark

Instructions 

  • I rehydrate the sun dried tomatoes in a bowl with warm or hot water for at least 20 minutes or until they're soft. I keep them in an airtight container for a few days. Feel free to use store bought sun dried tomatoes in olive oil and drain the oil.
  • Mix all the ingredients in a pan and cook for 10 or 15 minutes.
  • Serve the stew with some lamb's lettuce and sesame seeds (optional).

    Hi I was wondering what I could substitute for dried tomatoes? And how would I modify if I use dry beans? Thank you!

      Hi Rachel! You could just add a little bit of tomato paste, about 1-2 tbsp, and add more tomato sauce if needed. Then you can cook your dried beans from scratch and add about 1 and 1/2 cup (260 g) of the cooked beans 🙂

    Made this for dinner this evening and turned out very nicely. I used cannellini and great northern beans and stewed tomatoes along with the tomato sauce. We like spicy meals so I added some hot paprika and other spicy peppers and increased the tahini to make it creamier. Served it up on a base of rice with some avocado slices for garnish. Flavorful and filling!! Thank you

    Thank you! I cooked a big load of cannellini beans this morning and was looking for a tasty fast recipe to cook this evening.
    I improvised (no dried tomatoes)... I fried half an onion and a stick of celery (both finely chopped) and some garlic and half a chopped chilli in olive oil.
    I added some pre-cooked canellini beans and half a tin of tomatoes and half a stock cube in a little hot water and a quarter spoonful of smoked paprika.
    I would never have thought of adding tahini to a recipe like this, but it made it go a wonderful glossy orange colour and combined with the smoked paprika, it had a really lovely, rich taste.
    I ate it with a generous topping of shredded basil leaves. It took less than 15 minutes and was totally delicious.

    is it supposed to be tsp or tbsp onion powder, garlic powder sweet paprika tbsp sounds like a lot!

    Made this stew last night and it was easy as promised and delicious. Served with brown rice and some mixed greens underneath the stew. I used a chopped onion and 2 garlic cloves minced. I didn’t have corn on hand and substituted fresh peas.

    I didn't add the onion and garlic powders, but added a spoon of nooch - it tasted SO incredible that I ate the lot up just now (I had made enough for two goes LOL).

    I made this without the tahini as I forgot to add it! I substituted the paprika for freshly chopped rosemary and thyme. I added frozen peas instead of sweetcorn as hubby used the last tin without telling me. It was absolutely delicious, tasted like a bolognese sauce. Thank you for a lovely healthy recipe.
